  • 300g boneless chicken thigh (bite-sized pieces)
  • 1 tsp sesame oil

  • 1½ Tbsp miso (red or awase)
  • 2 Tbsp soy sauce

Instructions

1) Gather the Ingredients

Prepare boneless chicken thigh, sesame oil, grated garlic, grated ginger, miso paste (red or awase), soy sauce, sake, mirin, sugar, and shichimi togarashi if you prefer a spicy kick.

For the vegetables, gather carrot, red pepper, nira (garlic chives), and Taiwanese cabbage. Finally, have some shredded mozzarella cheese ready for the topping.

2) Prepare the Marinade

Mix miso paste, soy sauce, sake, mirin, and sugar (and shichimi if you like spicy) in a bowl. Mix well and set aside.

3) Marinate the Chicken

Add the chicken to the miso sauce. Mix well and let it sit for 10 to 15 minutes.

4) Prep the Vegetables

While the chicken marinates, cut the carrot and red pepper into thin strips. Cut the nira into 1-inch pieces. Chop the cabbage into bite-sized pieces.

5) Cook the Chicken

Heat sesame oil in a pan over medium heat. Add the marinated chicken and cook for 3–5 minutes. Push the chicken to one side, add the carrots and red pepper to the other side. Cook for a few minutes, then add cabbage. Finally, add the nira and mix everything together.

6) Add the Cheese

Push everything to the sides to make space in the center. Add the shredded cheese in the midle. Lower the heat and let it melt slowly. Cover the pan if needed.

7) Let the Cheese Melt Completely

Let the cheese melt evenly until gooey and bubbly. Keep the heat low to avoid burning.
